Crispy and piping hot snack with tea is always welcome and I often try to make it wholesome. Though deep fried these veg nuggets are way better snack for toddlers and kids than store bought junkies. Also if you don’t wish to deep fry I have shared some alternate ways.

These nuggets are not coated with usual bread crumbs but poha crumbs. Poha or rice flakes are pulsed finely and used for coating. These make the nugget very crunchy and tasty.

These veggie nuggets are just like those you get in cafes and fast food chains. Very crispy from outside with melt in mouth interior.

Serve veg nugget as snack or starter with drinks. You can also pack veggie nuggets in snack box for toddlers and kids.

What Are Veggie Nuggets Made Of ?

These veg nuggets are made of mixed boiled veggies, grated cheese if using and pulsed rice flakes. For seasoning I have used crushed ginger-garlic, green chilies, red chili powder, garam masala and cumin powder. So this is an Indian style veggie nugget recipe. How To Make Veg Nuggets?

Preparing veg nuggets is easy but a bit time consuming. We need to do some prep work before we actually fry the nuggets. Once you prepare and shape the nuggets you can easily fry them.

To make veg nuggets first of all boil, peel and mash the veggies very well. To that add grated cheese if using and mix well. Add the seasoning, some rice flake crumbs and mix well. Adjust the amount of rice flakes and shape the veggie mixture into nuggets.

How To Fry Veg Nuggets?

Once you shape the nuggets you can fry them immediately or freeze till using. To deep fry the nuggets heat oil in a deep thick pan.

Dip the shaped nuggets in corn flour slurry. Roll over the poha crumbs and deep fry in hot oil.

If you want to use less oil you can shallow fry these nuggets. Just use a shallow frying pan and fry in 2-3 tablespoons oil.

Can I Make Veggie Nuggets In Oven?

Yes, you can make these nuggets in oven just like how we bake veg rolls or patties.

Preheat oven at 180C / 350 F. Place the shaped nuggets in a grease baking tray and bake for 12-14 minutes.

Rotate the tray and flip the nuggets if needed. Bake for 7-10 more minutes or until dry and crispy. Serve hot.

Recipe Notes, Tips And Variations:

Adding cheese gives a rich texture to these nuggets. You can leave out cheese for vegan veg nuggets recipe. You can also grated paneer or tofu instead of cheese.

To make veggie nuggets crispy do use poha crumbs or rice flake crumbs.You can also panko crumbs or bread crumbs.

For a different flavor use chili flakes, mixed dried herbs and pepper powder as seasoning.

1. Pulse 3/4 cup rice flakes or poha finely using a mixer grinder or blender.

2. Boil or steam 2 large potatoes, 1 medium carrot and 3/4 cup green peas. Once done, peel and mash the veggies thoroughly.

3. To the mashed veggies add 1/2 teaspoon red chili powder, 1/2 teaspoon roasted cumin powder, 1/2 teaspoon garam masala powder, 3 tablespoons chopped coriander leaves and salt to taste.

4. Add 1 cup grated cheese and mix well.

5. Now add 3 tablespoons poha crumbs and mix well. Try shaping a nugget and add one more tablespoon poha crumbs if it doesn’t hold shape.

6. Mix 2 tablespoon corn flour in 1/4 cup water without lumps.

7. Pinch a small ball from the vegetable mixture into nuggets.

8. Dip the shaped nugget in the cornflour slurry. Roll over the remaining poha crumbs well.

9. Heat oil for deep frying. Once the oil is hot slide the nuggets gently and fry till it turns crispy and golden. Drain in a kitchen towel and serve hot.

  • 200 grams potatoes or 2 large
  • 100 grams carrot or 1 medium
  • 50 grams green peas or 1/2 cup
  • 1 teaspoon ginger-garlic minced together

  • 1 cup grated cheese optional, vegans can use vegan cheese or tofu
