Easy Grinch Low Carb Fudge Recipe
I love eating my kids’ snacks. And that’s dangerous when I’m on keto. Kid’s treats – especially during holidays – are nothing but sugary carb-filled danger zones. So I set out to create my own versions. And they turned out even better than any store-bought ones I’ve tried.
Keto-Friendly Treats for DIY Gifts
This low carb fudge recipe makes the perfect DIY gift idea for almost anyone. Give it as a teacher’s gift, or share it with a bus driver or share with some co-workers. Since it is both gluten-free and keto-friendly, almost anyone can eat it. It’s nut-free but does have dairy.
If you want to give this fudge as a gift, pack them in a holiday fudge tin and wrap it with a bow.
You can make it Grinch-themed by putting the fudge in a green tin and tying it with a red ribbon. Don’t forget a heart as the tag (his heart grew, after all!).
How to Make Grinch Low-Carb Fudge
Get your kids to help you make it. This is such an easy recipe that they will have a blast making it right along with you.
What’s In It:
The entire recipe is at the bottom of the post. But here’s what you need from the store to make your fudge.
- Heavy Whipping Cream
- Pyure Organic Confectioners Stevia Blend*
- Butter
- Vanilla Extract
- Lily’s Dark Chocolate Chips
- Cream Cheese
- Mint extract
- Green food coloring
How to Make It
There are only a few simple steps and then you’ll have the most memorable and cutest low-carb fudge ever.
1. Mix together heavy cream, Pyure*, butter, and vanilla in a saucepan over medium heat. This will create a thick sauce.
2. Remove from heat and add chocolate chips.
3. Pour into a baking pan and refrigerate. Let it chill for about 20 minutes, if not longer.
4. Create the mint layer. Mix together the cream cheese, Pyure*, heavy cream, and mint extract.
5. Add green food coloring. Mix it up until it’s the color you want.
6. Spread over the refrigerated chocolate layer. There will now be two layers, a chocolate one and a green mint one.
7. Refrigerate for another hour. Let this set in the fridge for at least an hour or more.

Grinch Fudge Recipe {No Sugar Added/ Low-Carb/ Keto-Friendly}
Yield: 25 pieces
INGREDIENTS:
Chocolate Layer:
1 1/2 cups Heavy Whipping Cream
1/4 cup Pyure Organic Confectioners Stevia Blend*
3 tbsp Butter
1 1/2 tsp Vanilla Extract
1 1/2 cups Lily’s Dark Chocolate Chips, or sugar-free chocolate chips
Mint Layer:
8 ounces Cream Cheese, softened
2 tbsp Pyure Organic Confectioners Stevia Blend*
2 tbsp Heavy Whipping Cream, room temperature
1 tsp Mint Extract
Green Food Coloring
Topping:
INSTRUCTIONS:
1. Line an 8×8 square baking pan with parchment paper.
2. In a medium saucepan over medium heat, mix together heavy cream, Pyure*, butter, and vanilla. Stir often for about 15 minutes. It should look like a thick sweetened condensed milk when done.
3. Remove from heat and let the mixture cool in the pan for 15 minutes and then stir in chocolate chips.
4. Once the chocolate chips have melted, mix until smooth and pour into prepared 8×8 baking pan. Spread mixture evenly, making sure to get into the corners.
5. Refrigerate for at least 20 minutes.
6. For the mint layer, add cream cheese, Pyure*, heavy cream and mint extract to a medium-size mixing bowl. Beat until smooth.
7. Add green food coloring (I used about 10 drops) and beat until incorporated.
8. Spread over the refrigerated chocolate layer evenly, making sure to get into the corners.
9. Refrigerate for at least 1 hour before cutting and adding hearts.
Notes:
* I used Pyure Organic Confectioners Stevia Blend in this recipe as it is my preferred sweetener. If you would like to use another sweetener, use the equivalent of 1/2 cup sugar in the chocolate layer and 1/4 cup sugar in the mint layer.
