I don’t know about you but I love caramel, well just about everything. I like caramel more than I like chocolate! I recently made the BEST Gooey Honey Bunches of Oats Caramel Cereal Bars recipe! They are super quick, easy, and taste great. I made them for my family that stayed at the house for the holidays and guess what? There is none left! Lucky for me I was the cook and know my family and grabbed me a piece for later.
One of my all time favorite cereals is Honey Bunches of Oats. My mom introduced it to me years ago; it’s her favorite too. My mom used to make these super yummy cereal bars that were ooey gooey peanut buttery goodness, and I decided to copy this recipe but change things up just a tad.
Gooey Honey Bunches of Oats Caramel Cereal Bars Recipe
If you like Honey Bunches of Oats cereal than I know you’ll love these caramel cereal bars! Caramel and Honey Bunches of Oats, it doens’t get better in my opinion.
You’ll Need:
- 6 cups Honey Bunches of Oats cereal
- ½ stick butter (1/2 cup)
- 1 cup brown sugar
- 1 cup Karo syrup
- ½ cups creamy peanut butter
- 1 tsp vanilla extract
- Dash of salt
Let’s make these Gooey Honey Bunches of Oats Cereal Bars:
- Spray pan with cooking spray. You can use a 9×13 pan or smaller. The smaller the pan, the thicker your cereal bars will be.
- In a large mixing bowl add Honey Bunches of Oats cereal and small it down a bit. I like to use my hands, but you can use anything you like.
- In a medium saucepan combine butter, syrup, and brown sugar.
- Over medium, high heat bringmixture to a boil and all reduce heat to medium and allow to boil for 2-3 minutes stirring consistently. Turn off heat and add additional ingredients and mix together.
- Pour mixture over the Honey Bunches of Oats cereal and stir together.
- Pour cereal mixture into your sprayed pan and press down to pack together. Place mixture in the refrigerator until cool and firm. You can also use the freezer if you are like me and can’t wait lol.
Topping (optional, but taste great)
- Melt 2 cups chocolate chips and spread out over the top of cereal bars. Allow chocolate to cool and harden.
- Enjoy!

OMG, they are sooooooo good! It has two of my favorite things lol – Honey Bunches of Oats and Caramel.. I don’t know that you could go wrong with that combo! I hope you love them!
