Thai Peanut Noodles with Chicken and Vegetables

My best friend has been making this Asian peanut noodles recipe for years. She calls it easy chicken peanut lo mein, after eating them I call them Thai Peanut noodles. The name doesn’t make a difference, they taste amazing regardless of what you call them.

I don’t remember when she started making them but I can not remember a time she didn’t have them on her meal plan. Not that long ago I was at her house for dinner and she made this peanut noodle recipe. I took a bite and was instantly in love. It totally reminded me of eating Chicken Pad Thai from my favorite Thai place.

My kids loved this recipe and my youngest now refers to them as peanut butter noodles. I know it might sound like a totally odd thing to combine spaghetti with peanut sauce and chicken but I promise you this main dish is one your entire family is going to love! Even if they do not love Thai food. My husband is not a Thai food fan and he loved this awesome recipe.

For us this is a one dish meal, the dish has everything needed to make a complete meal. If you are wanting something to go along with it here are some ideas for side dishes to go with this Asian Noodles recipe:

  1. Steamed vegetables. Peanut noodles pair well with steamed vegetables, such as broccoli, bok choy, or snow peas. The fresh and crunchy vegetables provide a nice contrast to the creamy and flavorful noodles.

Tips for making Thai Peanut Sauce Noodles with Chicken

Marinate chicken. The longer you marinate the chicken the more flavor it will have. You can marinate the chicken in the Italian dressing for up to 24 hours. I like to prep the chicken the night before and store it in the fridge overnight in an airtight container.

Cut chicken in to bite-sized pieces. Having the pieces of chicken already bite-sized makes it a quicker cook time. It also makes it easier to eat since it is already cut up.

Add More Veggies. I use grated carrots, diced onions, and green onions. If you want to add more vegetables you can add chopped bell pepper, mushrooms, bok choy, snow peas, or sugar snap peas as well.

Add some spice. If you are wanting a spicy kick to your peanut noodles then you can. Just add some red pepper flakes or extra cayenne pepper to the peanut sauce when you are making it.

Use a large pot. If you do not have a wok you will want to use a large pot or a large skillet when making the sauce.

Cook the noodles. You will want to cook the noodles while you are cooking the chicken and the sauce. Cook the noodles until they are al dente and then drain them from the water with a strainer.

Add extra peanuts. If you are a fan of peanuts you can add crushed peanuts on top when you are serving. Personally, I love adding crunchy peanuts on top of mine. They also taste great with a squeeze of lime juice on top as well.

Do I need a Wok?

If you do not have a wok then you can use a large skillet or a large pot. If you are using a skillet or a large pot then you will want to cook the chicken over medium high heat. Then turn the heat down to medium after the chicken is cooked all the way thru.

What type of Noodles should I use?

I created this recipe using spaghetti noodles as I wanted it to be easy to make for anyone to make. If you want to use Thai noodles you can. If you want to use rice noodles or brown rice noodles you can. Just be sure to cook them according to the package directions and you will still want to use 1.5 pounds of noodles.

What kind of Peanut butter is best to use for Peanut Noodles?

I personally like using half creamy peanut butter and half crunchy peanut butter but you can use one or the other to make up the peanut butter amount in the recipe. You can use natural peanut butter if you want to, just make sure you mix it well to combine the oil that is in it before measuring out the peanut butter.

Do I need to use Peanut Oil?

I like using peanut oil because I am making peanut sauce, but you can use olive oil if that is what you have.

Can I use Sesame Oil in place of sesame Seed oil?

Yes. I like using sesame seed oil because it has a slightly different flavor than sesame oil, but if you have sesame oil on hand but not sesame seed oil you can use it.

Can I Make this a Spicy Peanut Noodles Recipe?

Yes! If you are wanting spicy peanut noodles you can adjust the spice level in this recipe to your preference. I am not a fan of super spicy things but my husband and son are. If you are wanting a spicy Thai peanut noodles recipe add extra cayenne pepper when you are making the Asian-inspired peanut sauce.

How to Store Thai Peanut Noodles with Chicken

Once you have cooked the Thai peanut noodles with chicken store them in the refrigerator for up to 3 days. Keep the chicken peanut lo mein in an airtight container or freezer bag. You can also wrap the pan well with plastic wrap.

Yes! Thai peanut noodles with chicken can be frozen. Let them cool completely, and store them in an airtight container or sealed freezer bag.

Can I meal prep with this recipe?

Yes! So I have spent the better part of the last year purposely making things and putting them in the freezer so my kids can grab out a meal and make it since they are all on this kick of not eating sandwiches for lunch. If you are wanting to make individual servings and put them in the freezer for easy meals it is so easy to do.

  1. Cool the dish. Allow the peanut noodles to cool completely.
  2. Divide into portions. Divide the noodles into individual portions that are appropriate for your needs.
  3. Put the servings into freezer bags. Put each portion into quart-sized freezer bags. Personally I like using my food saver and vacuum sealing the individual portions as I find they freeze better.
  4. Label and date. Label each freezer bag with the name of the recipe and the date that it was frozen.
  5. Freeze. Place portioned bags into the freezer.

  • Boneless skinless Chicken Breasts. Cut into 1-inch chunks to make cooking and eating easier.
  • Italiandressing. You can use any brand of Italian dressing, this is for marinating the chicken.
  • Peanut oil. For cookingthechicken, if you do not have peanut oil you can use olive oil.
  • Thin spaghetti. broken in half, it is important to break the spaghetti noodles in half so you do not have long noodles in your final dish.
  • Green Onions. I just use the whole bush that I grab from the grocery store but you will want about 1/2 cup of green onions once they are chopped.
  • Yellow Onion. You can use white onions as well if you do not have any yellow onions.
  • Carrots. I use 3/4 pounds of large carrots, which is roughly 3-4 large carrots.

  • Minced fresh Ginger. You can use jarred minced ginger but I prefer to mince my own fresh.
  • Honey. It is important to use real honey.
  • Soy Sauce. You can use low sodium soy sauce if you are wanting to.
  • Sesame seed oil. If you do not have sesame seed oil on hand you can use sesame oil.
  • Cayenne Pepper. depending on your personal preference for spicy, 1/4 teaspoon will give a little kick but not too much
  • Peanut butter. You can use creamy peanut butter, chunky peanut butter, or a combination of the two. I use half chunky & half Creamy when making this recipe.

Mince the ginger and place it in a small bowl.

In a mixing bowl add the minced ginger, honey, soy sauce, sesame seed oil, cayenne pepper, and peanut butter and mix well. Once mixed set aside.

How to Make Thai Peanut Noodles with Chicken

Put a pot of water on the stove for the noodles, once the water is boiling add the noodles and cook until al dente. Once cooked drain the noodles.

While the water is boiling for the noodles, cut the Chicken into bite sized pieces and set aside in a bowl with Italian dressing (I like to let it sit for at least 15 minutes but you can have it sit for up to 24 hrs in advance).

While the chicken is sitting make the sauce and grate the carrots, dice the onion, and chop the green onions. Put each one in a separate bowl.

In Wok set to 400F or a large pot on high heat the oil and cook the chicken fully.

Turn heat down to 250 if using an electric wok or medium heat if using a pan on the stove and add the onions, cover, and cook 3 to 5minutes until softened.

Next, add the Carrots and cover for another 3 to 5 minutes until softened.

Then add the Green Onions and cover again for 3 minutes once they are cooked turn off the heat.

Add the cooked and drained noodles back to the pot that the noodles were cooked in and add the sauce toss to coat the noodles.

Add the noodles and sauce to the wok with the chicken and veggies that are cooked and mix well to combine.

If you used a skillet to cook the chicken and the veggies then you might want to pour the chicken and veggies into the pot with the noodles so there is enough room to mix everything well.

  • 3 pounds Chicken Breasts cut into 1-inch chunks cut into 1-inch chunks
  • 12 ounces Italian dressing
  • 2 Tablespoons peanut oil for cooking the chicken
  • 1.5 pounds thin spaghetti broken in half
  • .5 cup Green Onions finely chopped
  • 1 large yellow Onion finely chopped
  • 3/4 pound Carrots grated

  • 3 Tablespoons Honey
  • 3 Tablespoons low sodium soy sauce
  • 3 Tablespoons Sesame seed oil

  • 6 Tablespoons peanut butter I use 3 chunky & 3 Creamy
