I found that 90 percent of the articles assumed that people were snacking on junk. The word ‘snack’ automatically assumed you were eating cookies, candy, chips, and other not so good for you foods. There are a number of benefits of healthy snacking and I will share those with you here, as well as a delicious applesauce quick bread recipe that I made this weekend.

The key to healthy snacking is to choose your foods wisely. Pick foods made from scratch. Look for whole grains, nuts, fruit, and high fiber foods. Skip the artificial ingredients whenever possible. While applesauce bread may not be as healthy as a bowl of carrot sticks, life is all about balance.

Bake things from scratch rather than buying them premade. While some snacks are definitely bad for your health, this homemade applesauce quick bread recipe is a healthy alternative to the junk most kids find in their pantry! Unsweetenedapplesauce can be used to replace part or all of the butter or oil in a recipe. It can be swapped in equal quantities, although I generally only replace half of the oil with applesauce.

Ingredients

  • 4 eggs
  • 1 1/2 cups granulated sugar
  • 3 cups Musselman's applesauce
  • 2 sticks unsalted butter, melted and slightly cooled
  • 3 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1 teaspoon kosher salt
  • 2 tsp ground cinnamon
  • 1 1/2 cups walnuts, chopped (optional)
  • 1 1/2 cups raisins (optional)

Instructions

  1. Preheat the oven to 350°F and lightly grease two loaf pans
  2. In a large bowl, combine the flour, baking soda, salt, and cinnamon and mix well. Set aside.
  3. In a mixing bowl, combine the eggs and sugar. Beat on high 2 to 3 minutes, or until the mixture takes on a lemon yellow color.
  4. Add the melted butter and applesauce to the wet ingredients, mixing well.
  5. Into the wet ingredients, slowly mix the dry ingredients as well as the nuts and raisins. Mix gently but thoroughly.
  6. Gently pour the batter into the prepared pans. Bake loaves for 1 hour, or until knife inserted into center of loaf comes out clean.
  7. Let the applesauce bread cool in the pans for 5 to 10 minutes before turning onto a wire rack to cool completely before eating.
